Halloween Treat for the whole family

With Halloween just a day away, the excitement for treats grows with anticipation. Although many of the snacks that are handed out this time of year are full of refined sugar and unhealthy ingredients, I thought I would share a homemade treat that the entire family care enjoy. If you know me, you know I have always had a love for chocolate chip cookies. As a diabetic and someone that suffers from Celiac disease, the indulgence of such a treat is no longer an option, until now.
Put all those candies and mini chocolate bars aside, and make room for these delicious gluten, dairy, and refined sugar free chocolate chip cookies…that’s right I said chocolate chip cookies that can be enjoyed by everyone.
Give them a try this Halloween and enjoy a treat that is guilt-free…just remember not to eat them all in one sitting.

Flourless Almond Butter Chocolate Chip Cookies
Ingredients
-1 large egg
-1 cup almond butter
-1/4 cup coconut sugar
-1 scoop chocolate protein powder (I used a vegan powder)
-1 tsp baking soda
-1/2 cup cacao nibs or sugar free chocolate chips (enjoy life brand)
Method
Set oven to 350 degress F
Crack the egg into a medium bowl and beat it lightly. Add in the almond butter, baking soda, coconut sugar, and protein powder and mix everything together well.
Fold in the chocolate chips
Scoop the dough onto a parchment lined baking sheet. Space the cookies well apart, and flatten them slightly with the back of the spoon.
Bake for 8 to 10 minutes. Don’t overbake these, the cookies will look underdone, but they will firm up as they cool.
Let them cool for a couple of minutes on the baking sheet, then transfer them to a cooling rack.
Notes:
-If you are looking to make a nut free version, choose any type of seed butter.
